Another well-planned week without a bunch of leftovers that we won’t eat and will throw away. It can be difficult to know with new recipes exactly how many servings they make since only The Doc eats a normal size. Here’s the rundown on how everyone ranked the meals.
  • Falafel in pitas with taboule. The Doc commented that I’ve gotten him addicted to this kind of food, so it’s definitely a winner! 5 out of 5
  • Jerk Chicken and roasted vegetables. Following the recipe, the veggies turned out a bit mushy. I’d skip the pre-cooking boil next time and just let them roast. They should be well-done then but still hold a good texture. 4.5 out of 5.
  • Tuna Casserole. It’s hard to go wrong with this. A solid 4 out of 5.
  • Chicken Wraps with lime cream and yummy Spanish rice. I used some of the jerk chicken that was left as the basis for this, so it really helped kick up the flavor. It was easy to get this rated high after the chicken went over so well on its own. 4.5 out of 5.
